Our Executive Chef and his team have over 65-years of special event and catering experience. Executive Chef Matt Schmitt will be celebrating his 18th Anniversary with us in the spring of 2012. His passion and dedication is such a great asset to the company. We are lucky to have him and you are lucky to have him as the Chef for your special event. The Pavillion, Our Executive Chef, his staff, and the owners of The Pavillion and Avenue Catering have placed a strong emphasis on food presentation, menu selection and value. We offer three main types of styles for food service:
Our "Progressive Buffet" is the signature food service style of The Pavillion. In 1988 we created the term "Progressive Buffet" and pioneered the approach to serving our clients by having them "progress" from one themed food station to another during a reception. Since our successful development of the Progressive Buffet, other caterers have emulated our format and have created their own versions of the progressive buffet. We have been changing and implementing new techniques to perfecting our signature Progressive Buffet and we welcome you to explore this or any of the other unique food services we offer.
In addition to the Progressive Buffet, we also offer our clients the option to have a customized seated dinner menu and a custom seated buffet menu. Our “Seated Dinners,” “Seated Buffets” and “Progressive Buffets” all come with butler style passed hors d'oeuvres.
